Lemon is one of my favorites; the Lemon Zest is what make the muffins or cake "the best"; to zest a lemon; use a fine grater on the whole lemon with the peel; then use the lemon juice with the zest; : ;. I especially like the recipes. Do you have one for lemon muffins?
Unfortunately, back in the day, I didn't save it. Thank you. Thank you, Ruth! We have several lemon muffin recipes. Hey, I found a recipe that requires heating up some of the ingredients in a saucepan, which I didn't because like a dolt, didn't read the full insteuctiins.
My question, though, whats the difference in heating up the ingredients first before baking? I've seen some recipes for Brownies that are similar. Why would my bran muffins crumble to pieces instead of holding shape? Should I soak my bran in the liquid for 10 min. I have and use several types of silicone baking products, including the Silicone bake ware and I love them.
The directions that came with all of them said to spray them with non-stick spray prior to first use. I did and had no problem cleaning them. About every third use I give them a quick spray again. I think in over 3 years I have only had one section an my mini-loaf pan that the batter stuck and I had to scrub it clean. The cupcake liner have never stuck. My mother always flipped her biscuits. Usually 10 minutes cooling time before flipping works.
When you use an electric mixer for the muffin batter, you might over mix it. Just mix it by hand, and they will come out much better. Years ago, I was always over mixing my muffin batter. The problem had to do with me overmixing them. No, overmixing muffins creates a dense gluten muffin with a crunchy bread-like top. Although muffins made with wheat flour naturally have gluten in them, you can minimize it with less stirring.
You want to reduce the chemical process that creates gluten. Gluten forming process happens when the wheat flour comes into contact with water while stirring or kneading. If your muffin dough is at the point where it seems like it is stretching, then you overmixed it.
Mix muffin batter until they are lumpy and the ingredients are just combined. You might even still see some dry flour in your muffin mix. Seeing this dry flour is ok; as long as your muffin batter is gently combined, they will come out perfectly every time. Glutenin and gliadin are the two proteins within the wheat plant that is responsible for gluten formation. Baking muffins may very well be the perfect rainy day activity.

This makes them softer and less dense and sturdy than a cupcake made from butter-based cake batter. Melted butter, when added to muffin batter, becomes solid at room temperature even after baking which creates a more dense crumb, like a cupcake. Vegetable oil is liquid at room temperature, so it helps to create a very soft crumb, perfect for muffins!
Muffins should be light and fluffy, not dense. The key to creating big muffins like Starbucks is in the oven temperature.
